Our oils are sourced from farmers we know and trust—families who have been tending their groves for generations and who believe, as we do, that great ingredients start with patience and care.
Every harvest is shaped by sun, soil, and time. Nothing rushed. Nothing overworked. Just thoughtfully grown olives, pressed at their peak, to create oils that are vibrant, expressive, and meant to be shared. Limited in quantity, but exquisite in taste.
Bill’s is about slowing down, cooking with intention, and finding joy in the everyday moments—whether that’s tearing bread at the counter, finishing a dish with a generous pour, or gathering friends for a long meal that turns into an even longer night.
